When we picked green chillies from a new plant in our garden, they had no flavour at all. So when they ripened to red we added them liberally when cooking our supper.
But we had been misled! Unexpectedly, once they’d ripened to red, these chillies were hot! Dangerously hot! Eye-wateringly hot!
And so here we are drying some of these home-grown chillies on a line. But now we have been forewarned, and we know about the danger: that there is fire on the line.

Love this one! We grew some chillies from India that almost blew the top of your head off. Oddly enough we like them like that! 😉

I have been exploring chilli variety in Mexico and finally learning which ones I can tolerate. I like it hot but not so hot, it takes from the flavours. Great post.

I should think there is plenty of scope for exploring chillies in Mexico. I agree the heat should not be overriding.

Indeed… It began as a little experiment after buying a small variety from the local Food Lovers Market. They sort of went a bit haywire!
I may get in touch with a local nursery to see if they want to buy a few
If ever you com up, you must bring some of that oddly named beer they make down there on the Midlands Meander somewhere (if you can find any)!

My eyes are watering simply thinking about that unexpected moment of chili heat which has to be the most uncontrolled and pervading heat known to mouth.
